At Fera Science Ltd we have been supporting the food industry for many years and have extensive knowledge of the Food Regulatory systems for snacks and convenience foods both in Europe and further afield.  The Food Standards Agency (FSA) has been working to understand more about acrylamide, in attempt to reduce the risk that it presents and provide advice to both industry and consumers. Snacks can however have some extra challenges. For example, acrylamide (a chemical produced naturally in food as a result of cooking starch rich food at high temperatures) has been identified by the European Food Safety Authority (EFSA) as “potentially increasing the risk of developing cancer for consumers in all age groups”.  Other chemicals of concern, which may also be formed during manufacturing, include furan, 3- and 2-monochloropropane-1, 2-diol (MCPD) and glycidyl esters.
